Ingredients

  • Portobello Mushrooms - 2 large
  • Red Pepper - 2
  • Olive Oil - 2 TB / 25 g
  • Chili Powder - 1 TB / 10g
  • Salt - to taste
  • Cotija/Jack Cheese - 4 oz / 250 g
  • Corn/Flour Tortillas - 4-8
  • Lime - 1

Steps

1. Slice/Chop mushrooms, pepper
2. TURN ON BURNER: MED HEAT
3. Add oil, mushroom, pepper, chili powder, salt
4. Cook 3-5 min until soft
5. Toast tortillas in dry skillet or over flame
6. Add veggie mix to tortillas
7. Sprinkle cheese, Squeeze lime
